 If you want to taste real food from India, you can’t just go to an Indian restaurant abroad, but you have to explore its gastronomy in India itself, because some of the ingredients are inextricably particular to place and can not be exported easily. Food from India reflects the fascinating culture and changes shape as you travel around.  

Food from India is usually spiced with black pepper, turmeric, coriander seeds, cumin seeds, tamarind, cardamon or saffron. The most important staple is rice, and in the north a meal always comes with roti or bread. The most common bread is the delicious chapati, but puris and kachoris are also popular.  

Milk and milk products are also very important food from India and people make a lot of dishes with dairy products. Dahi (curds) are served with almost every meal and are good for countering heat. Paneer (unfermented cheese) is very good for vegetarians. Lassi is a popular, nourishing yogurt drink and ghee (clarified butter) is the traditional cooking medium.
