Two of India's classic recipes.

 

 

 India’s classic recipes can differ very much from region to region. For example, the popular rice dish “ Pullau”” has and endless range of local versions. India recipes therefore always leave a lot of room for personal improvisation. Generally India food is very spicy, but again, you can use your own standards here too.

One of the great India recipes is called masala Wada. This is what you need to make it: 2 ˝  teacups gram dal, 10 red chillies,  sliced onions, 2 sliced green chillies, 4 tablespoons chopped coriander, ˝ grated fresh coconut, some chopped mint leaves, 1 teaspoon cumin seeds, salt, oil for deep frying. How to make the Wadas: Soak the dal overnight, grind the dal with the chillies and cumin seeds. Add the other ingredients. Shape into Wadas and deep fry. Serve with coconut chutney.

Another of the popular India recipes is Pullau. This version is called Corn and Vegetable  Pullau. Needed: 1 teacup cooked corn, 1 ˝ teacups uncooked rice, 1 teacup boiled French beans and carrots, 3 sliced onions, 2j tablespoons cashew nuts, cinnamon, cloves, coriander seeds, oil. First boil the rice. Deep fry the cashew nuts in oil (or ghee). Fry the onions. Add the cinnamon, cloves, turmeric powder, coriander seeds, garlic. Add the rice, corn, vegetables and salt. Mix well and cook for two minutes.
